Heston’s Willy Wonka factory of haute cuisine launched in 1995 and a quarter of a century and three Michelin stars later, it continues to wow diners with its mind-blowing dishes. To celebrate its evolution, and influence on modern dining today, Heston’s Michelin starred gastropub The Hind’s Head has delved into the Fat Duck’s history books to give three of Heston’s old school classics culinary CPR.
For a limited time only (now – November 2020) you have the opportunity to sink your teeth into The Fat Duck – Eating The Years three-course menu – and it’s only available at The Hind’s Head in Bray (£60pp).
What’s on the menu? First up, from 2003, we have Pumpkin Velouté with pig’s cheeks and hazelnuts. Turn back time again to 2001 for the main – a Petit Sale of Duck with green beans and a green coffee sauce, finishing with an epic pud MilleFeuille of Pain D’Espices (2001) with pineapple and a chilli and crab syrup.
