A destination Isle of Wight restaurant with laidback, holiday vibe and a sell-out reservations book, The Hut in Colwell Bay is one of the hottest places to eat on the South Coast (and not just because of the retractable roof).

Ingredients



<ul>
<li>8 tortilla rounds</li>



<li>8 cod goujon pieces, 50g each</li>



<li>Tempura flour and sparkling water</li>



<li>Taco salsa</li>



<li>1 red onion, thinly sliced</li>



<li>Micro cress</li>



<li>1 lime, cut into wedges for the tacos to sit on</li>
</ul>



For the taco salsa



<ul>
<li>2 beef tomatoes, grated</li>



<li>2 spring onions, cut into rounds</li>



<li>12 coriander leaves</li>



<li>40g mango, diced</li>



<li>Pinch of cayenne pepper</li>



<li>20ml oil</li>



<li>Salt, to taste</li>
</ul>



Method



Mix all the ingredients together in a bowl. Set aside. Cut your tortilla rounds from a large taco to 4–4.5 inch in diameter.



Next, make a tempura batter using tempura flour and sparkling water to create a light batter that will coat a spoon. Finely slice a red onion either with a knife or a mandolin and keep cold in ice water.



To garnish, use micro coriander and micro red amaranth like The Hut or simply pick some nice coriander leaves. Deep-fry your cod portions in the tempura batter at 180°C. 



While they&#8217;re frying, warm your taco shells in a warm frying pan without oil. Once the tacos are warm, place the fish inside and top with the salsa. Garnish with the red onion and micro cress/coriander.

Ingredients



<ul>
<li>480g Smoked Chicken Breast (cooked)</li>



<li>160ml House Dressing</li>



<li>160g Mooli, julienne</li>



<li>160g Carrots, julienne</li>



<li>160g Cucumber, julienne</li>



<li>200g Bang Bang Sauce (see below)</li>



<li>4g Mixed Sesame Seeds</li>



<li>5g Crispy Shallots</li>



<li>20g Micro Coriander or Coriander Leaves</li>



<li>2 Limes</li>
</ul>



For the Bang Bang Sauce



<ul>
<li>105g Smooth Peanut Butter</li>



<li>45ml Sesame Oil 45ml Vegetable Oil</li>



<li>15ml Sweet Chilli Sauce</li>



<li>Squeeze of Lime</li>
</ul>



Method



Soften the peanut butter by either putting the jar in warm water or in a microwave. Next, whisk in the sesame oil, and add the lime and sweet chilli sauce. Let the sauce cool down to see how thick it is then add the vegetable oil making sure that the sauce is nice and thick when it is finished. To serve you need to leave the sauce out to come to room temperature.



For the House Dressing



<ul>
<li>20g Dijon Mustard</li>



<li>5g Sugar</li>



<li>40ml White Wine Vinegar</li>



<li>120ml Vegetable Oil</li>
</ul>



Place the mustard, sugar, and white wine vinegar in a bowl and slowly whisk in the vegetable oil. Set aside.



Cut the vegetables into the thinnest batons possible, approximately 2.5 inches long. If you have a mandolin, this makes the job much easier. Break the chicken breast down into mouthful size pieces but not too small.



In a bowl, add the salad with 2/3 of the house dressing, a few coriander leaves and mix. Lay this on top of the bamboo leaf if you are using one. Mix the smoked chicken with the rest of the house dressing, lay this on top, then with a spoon pour the Bang Bang sauce over the chicken. Top with the sesame seeds, crispy shallots, micro coriander and garnish with the juice of half a lime.

<li>50ml Mermaid Pink Gin</li>



<li>25ml Chambord</li>



<li>25ml Sugar Syrup</li>



<li>25ml Lemon Juice</li>



<li>Ice Cubes</li>
</ul>



Garnish



<ul>
<li>Mint Sprig</li>



<li>Strawberry</li>
</ul>



Method



Pour 25ml of Chambord into a low rocks glass and top with ice cubes. Add the remaining wet ingredients into a Boston shaker along with 10-12 ice cubes and shake well for 10 seconds. Strain the liquid into the glass slowly over the ice cubes allowing the liquid to layer with the Chambord. Garnish with a sprig of mint and half a strawberry.
